Leftover Cheesy Steak Sandwiches
I love re-making leftovers…it is actually one of my specialties! I try not to throw much out, so I try to find ways to reinvent what we already have on hand.
The end of the semester is here and I am usually exhausted when it is time to prepare dinner on the weeknights. Last night, I made steak and potatoes for dinner. And, lately, the boys have been asking for sub sandwiches for lunch. I had some sub rolls leftover from sandwiches and some steak leftover. So, I decided to make this easy cheesy steak sandwich for dinner!
I have found that steak is better warmed on the stove than it is in the microwave. The microwave can leave it a little rubbery. I just warm my pan, and put a bit of olive oil in the bottom. I slice my steak so I don’t have to cook it long and to ensure it gets warm throughout. I also add a little Better Than Bouillon to add a bit more flavor to the meat.
I buy the sub bread from the bakery at my local grocer H-E-B. If you go early in the morning, the bread tends to be fresh and just perfect.
I toast the bread in the air fryer while I am warming the meat. Once the meat is done (it only takes a few minutes), I layer the sandwich with ranch, cheese and the meat. If I were making this for myself, I would add some sauteed onions, peppers and mushrooms, but the boys would just pull those out and waste my effort so I skipped this step.
I throw it back in the air fryer for a few minutes to melt the cheese and viola…dinner is served! You can serve this alongside a salad, chips or fries. It really doesn’t matter…this sandwich is just good!
Ingredients:
Leftover steak, sliced (I used NY strip)
1 tsp olive oil
1/2 teaspoon Better Than Boullion
2 slices of cheese (I used colby)
Sub roll
Condiment of choice (I used ranch)
Sauteed onions, bell peppers and mushroom (optional)
Directions:
Heat saucepan to medium high heat. While this is heating, dissolve your Better Thank Bouillon in 2 tablespoons of hot water.
Once pan is hot, add olive oil to your pan. Then, add your sliced steak to the pan. You only want to cook the meat for about 2 minutes on each side…just enough to warm it without overcooking it. When you flip it, add the bouillon mixture to the pan to help with flavor and ensure your meat does not dry out.
Next, put your sub roll in the air fryer on 400 for 2 minutes. Remove the toasted roll from the oven and add your condiment of choice, then add the steak and the cheese to your roll. Add the sandwich back to the air fryer (open-faced) for another two minutes to melt the cheese and warm the meat a bit more.
Carefully, remove the sandwich from the air fryer and enjoy!

I use leftover steaks so many different ways! Sandwiches, quesadillas, nachos, or even serve it over the baked potato to make is stretch further! We will eat all the leftovers (when we have them), so I try to find different ways to use them!
