Kung Pao Chicken Kit–Aldi Review
I love an easy meal! And, this Kung Pao Chicken Stir Fry Kit from Aldi came highly recommended from a few of my Instagram peeps so I felt like I had to try this out! The kit comes with everything you need to have a complete meal: chicken, rice, sauce and peanuts. It claims to feed four, however, I believe, realistically, it will only feed 2 people.
I love veggies with my stir fry, so I did sautee some onions and peppers and steam some broccoli to add to this meal. I also replaced the rice that came with the kit with cauliflower rice.
First, I diced the onions and peppers (use as much or as little as you like) and added them to a warm skillet with a little bit of olive oil. While the veggies were cooking, I steamed the cauliflower rice and the broccoli in the microwave according to the bag directions.
Once the onions and peppers cooked for a bit, I added the chicken and the broccoli to the mix and cooked until this mixture was warmed throughout. Last, I added the sauce pack to the mix and heated it through before plating the mixture on a bed of cauliflower rice and topping the mixture with the peanuts provided in the kit.
This was really good! It is perfect for a weeknight meal or for those times when you do not feel like cooking, but know you need to eat. I shared this with my son and we ate every bite. I really can’t imagine this feeding four as the package suggests…especially if you don’t add vegetables to the mix. And, my son did not even notice he was eating cauliflower rice! Oh well…what he doesn’t know won’t hurt him. And, in this case, it will actually help him.
