Big Breakfast Sandwich

Does anyone else wake up at the very last minute every morning? Press snooze a minimum of 10 times trying to get those last couple minutes of good sleep? I know I CAN’T be the only one who does this. I don’t know why I keep doing it but I just can’t stop. 

Regardless of how late I am running, my goal is to ALWAYS have a hot breakfast for my family that I have prepared at home. This sandwich was created on one of those mornings where I had to shove breakfast at everyone as we were running out of the door. 

The Big Breakfast Sandwich (or BBS because I love a good abbreviation) is so versatile and can be prepared quickly. More than that, it’s filling and should keep the hunger pains away until it’s time for lunch. 

The components are usually staples you always have on hand: bread, breakfast meat, egg, cheese and potatoes (if you wish). You can really make this to suit your taste. Let’s talk ingredients. 

The first component is bread. Our favorite type of bread to use is sliced brioche. But, we have tried this with refrigerated biscuits, croissants, Hawaiian sweet rolls and burger buns. All are very good, but the brioche is AMAZING. 

Next, choose your protein. I have used bacon, breakfast sausage and smoked sausage links. Ground maple sausage seems to be the favorite for these sandwiches in my house. I usually slice off a bigger piece of sausage from the tube and pat it out into a burger size patty so it fits the bun/bread better.. 

Last, you want to select your cheese. You want something that melts nicely. You like spice, get you some pepper jack or chipotle cheddar. Like it mild? Go for a colby jack. Really, any cheese will work. For my family, some of us like spice and others don’t. So, I use different cheeses for each of us. 

Once you get the sausage patties and eggs cooked, the bread toasted, and the frozen hash brown patties warmed (I usually use my air fryer),the sandwiches are pretty simple to assemble. Then, I wrap them in foil for easy transport. These are a quick, easy and delicious option for breakfast. Especially if you’re a chronic snooze-pusher like me!

Ingredients (as pictured for one sandwich):

2 slices of brioche bread

1 slice of colby jack cheese

1 egg scrambled

1 breakfast sausage patty

1 frozen hash brown patty

Directions:

The first thing you want to do is get the hash brown in the air fryer. Set the air fryer to 380 degrees and set the timer for 10-12 minutes (times and temperatures may vary depending on your air fryer). 

Next, cut the tube of sausage for about the equivalent of 2 patties. Then, roll the meat into a ball and pat it into one large patty. Place the sausage patty in a warm skillet and cook until the edges become brown. Then, flip and cook the other side. 

While the sausage is cooking, begin to prepare your egg. Add a slightly whipped egg to a hot sauté pan and cook until one side is done and then I flip to cook the other side to make one sandwich-sized egg patty. This ensures the egg stays in the sandwich while it is consumed because scrambled eggs could fall out while eating the sandwich.

While the sausage and eggs are cooking, you can begin toasting your bread (I usually use a toaster for this). When the sausage, egg and hash brown are ready, you can begin assembling. 

On one slice of bread, layer the hash brown patty first, then top it with a little ketchup. Then, layer the egg, sausage and cheese on top of the hash brown (in that order) and top it all with a little hot sauce and honey for extra flavor. These sandwiches are wrapped in foil and ready to grab as everyone runs out of the door to their destinations!
