Low Carb Air Fryer Garlic Parmesan Shrimp

Who else absolutely loves garlic??? Listen…I could have a bit of garlic in every meal. And, if a recipe calls for a clove, I am adding a minimum of four cloves. I can’t be the only person who loves garlic this much.

Garlic parmesan is one of my favorite wing flavors for obvious reasons. And, a local wing joint serves the best fried shrimp and you can select any wing sauce or seasoning to go on your shrimp. Since I try to eat low carb as often as possible, I decided to look into ways to make this at home using my air fryer instead of deep frying it.

I used about a pound of extra large shrimp and I added some olive oil, garlic, parmesan, lemon juice, salt and pepper. I mixed everything together and let that marinate in the fridge for about an hour. Now, you can prepare your shrimp however you like it. If you like to leave the tails on, do that. If you want them off, do that. If you want them deveined with the shell on, do that. Do you! I peeled and deveined mine, but I left the tails on so I would have something to grab when I was eating them.

If you are looking for a way to cut some of the calories, you could cut out the olive oil and spray the shrimp with oil instead just before placing them in the air fryer.

I cooked the shrimp in a single layer in the air fryer for about 10 minutes on 350, checking them after 5 minutes to turn them or shake the basket (depending on the type of air fryer you own). That’s it! Super simple, low carb (so no guilt) and delicious!

And, these came out amazing! The cheese makes a bit of a crunchy coating and the parmesan, lemon and garlic compliment one another perfectly! I cannot wait to make these again! I may or may not have eaten them all and not shared any with my family…so, let’s not tell them about this post.

Ingredients:

1 pound extra large shrimp

1/2 tablespoon olive oil

salt and pepper to taste

1 tablespoon lemon juice

6 cloves finely diced garlic (or more if you like)

1/4 cup grated parmesan cheese

cilantro or parsley for garnish

Directions:

Add shrimp to a large bowl with the olive oil, salt, pepper, lemon juice and garlic. Mix well to coat and cover. Marinate in the refrigerator for 1-3 hours.

When you are ready to cook your shrimp, put the parmesan cheese in the bowl with the shrimp and toss to coat. You can also put the shrimp on a flat surface and sprinkle both sides with the cheese.

Place shrimp in air fryer and cook on 350 for 10 minutes. Check on shrimp at the 5 minute mark and shake pan or flip shrimp.

Garnish with cilantro or parsley and a little more lemon juice, if desired. Enjoy!
