No Fuss Pecan Pie

For the longest, I was not a big pecan pie fan. Either the pie didn’t have enough pecans for me or the filling was entirely too sweet. The first Thanksgiving we hosted, my hubby requested a pecan pie. I was nervous, but I went to the internet in search of the perfect, easy recipe. I searched high and low and finally stumbled upon the Southern Pecan Pie recipe from thespruceeats.com. This recipe does call for a scratch made pie crust, but I am never doing that…LOL. So, I have always used frozen crust for these pies and they are still delicious!

And, the best part: this recipe is super simple! It doesn’t even require you to use a mixer! All you need is corn syrup (I use light), brown sugar, butter, vanilla extract, salt, eggs, pecans and a frozen pie crust. That’s all you need to make this delicious pie…and, all of these ingredients are easily accessible.

I already told y’all I am not making pie crust from scratch, but I have found that for this recipe, the deep dish frozen pie crusts work best. There will be a fair amount of batter and I have found that if you do not use the deep dish crust, you will have too much batter for one pie and not enough batter for two. Using the deep dish crust is perfect for the amount of batter this recipe produces.

You also want to make sure your butter has cooled a bit before mixing your batter…there is nothing worse than your eggs scrambling while you are mixing your batter. And, adding your slightly beaten eggs one at a time will also help cut down your time mixing the batter.

You can use dark corn syrup, but I always use light corn syrup. I don’t like my pies overly sweet and using the light corn syrup seems to do the trick on cutting a bit of the sweetness. The original recipe calls for 1 1/2 cups of pecans, but we LOVE pecans. So, I usually use an entire 12 ounce bag of pecan halves which is a little over 2 cups.

Once you make this pie, your friends and family will be expecting you to make it for each holiday, so be ready! The good thing is, this is so easy to make, you won’t mind making it for every holiday!

Ingredients:

1 cup brown sugar

1 cup light corn syrup

1/3 cup melted butter

1 tsp vanilla

1/4 tsp salt

3 large eggs (slightly beaten)

2 cups pecan halves

1 deep dish frozen pie shell

Directions:

Preheat oven to 350 degrees. Add the brown sugar, corn syrup, vanilla, salt and butter to a large bowl and whisk until the mixture is combined. Then, add the slightly beaten eggs, one at a time, to the mixture, stirring well before adding each egg. Last, add the pecans and stir. Then, pour the batter into the frozen pie shell and place it in the middle rack of the oven. Bake for about an hour. The pie will be set, but slightly jiggly in the middle. Cool the pie completely before eating. This is good alone, but even better with vanilla ice cream or whipped cream.
